Ingredients
- 1 lb (450 g) beef sirloin or flank steak (thinly sliced)
- 2 cups broccoli florets
- 2 tablespoons vegetable oil or sesame oil
- 3 garlic cloves (minced)
- 1inch piece of fresh ginger (minced)
- 1/4 cup soy sauce (low sodium)
- 1/4 cup beef broth or water
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch (mixed with water)
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- A pinch of red pepper flakes
- A pinch of black pepper
- Sesame seeds and green onions for garnish
Instructions
- Prepare the beef: Start by slicing the beef thin against the grain. This helps make it tender when cooked. Set it aside while you get other things ready.
- Blanch the broccoli: In boiling water, blanch the broccoli for about two or three minutes until bright green and tender-crisp. Drain and put immediately into ice water to stop cooking. Drain again and set aside.
- Make the sauce: In a small bowl, mix soy sauce, beef broth, oyster sauce, rice vinegar, brown sugar, and black pepper. This will be your base sauce.
- Cook the beef: Heat a tablespoon of oil in a big skillet or wok over medium-high heat. Add sliced beef and stir fry for two to three minutes till browned and done. Remove from pan and set aside.
- Sauté garlic and ginger. Add another tablespoon of oil to the same pan. Sauté minced garlic and ginger for about a minute until they smell good but are not browned.
- Add broccoli and sauce: Put blanched broccoli back in with garlic and ginger. Pour in prepared sauce and stir to coat broccoli.
- Thicken the sauce: Stir in the cornstarch slurry mixture and cook for one or two minutes till thickened. For thicker sauce, add more cornstarch.
- Return the beef: Put cooked beef back into the pan and mix until everything's well coated and heated through for one or two minutes.
- Garnish and serve: Sprinkle sesame seeds and green onions on top as garnish. Serve hot over steamed rice or noodles.

- Choose the right beef: Flank steak or sirloin works best because it's tender. Slice against grain.
- Marinate extra flavor: Marinate beef in soy sauce mix for more flavor; do this before cooking for around twenty to thirty minutes.
- Add more veggies: If you want more veggies, try bell peppers, carrots, snap peas, or mushrooms.
- Use chicken or tofu instead. If you are not interested in beef, then use chicken breast slices or tofu, which keeps still yummy.
- Spice it up! If you like spicy, then add red pepper flakes or sriracha to kick it up a notch.
- Gluten-free option: Just use tamari or gluten-free soy instead of regular soy.
