Ingredients

  • 4 large flour tortillas
  • 2 cups of shredded cheese (cheddar, mozzarella or your favorite mix of the two)
  • 2 teaspoons shredded chicken
  • ½ cup black beans
  • 1/2 cup bell peppers, diced
  • 1 tablespoon butter or olive oil (for cooking)
  • Salsa, sour cream and guacamole to serve

Instructions

Jack-o’-Lantern Quesadillas

  1. Design the Jack-o'-lantern Face: Place two tortillas flat and, with a sharp knife, carve out Jack-o'-lantern faces. With a small willow circle, cut out two triangular eyes, one for the nose and a jagged mouth to make your quesadilla look like a pumpkin.
  2. Assemble the Quesadillas: Lay the last two whole tortillas on a flat surface. Add an even layer of shredded cheese over each one. Add your add-ins; if you are using any, shredded chicken, black beans, and diced bell peppers are all really great.
  3. Serve, Topped with The Jack-o'-lantern Tortillas: Carefully place the Jack-o'-Lanterns over the filled tortillas again, and gently press down so that cheese and fillings adhere.
  4. Cook the Quesadillas: Heat a skillet or griddle to about medium heat with some olive oil or butter. Gently add one quesadilla to the skillet and fry for 2 to 3 minutes until the tortilla is golden and crisp and the cheese is melted.
  5. Serve: Using a sharp knife or pizza cutter, slice the quesadillas into wedges and plate with salsa, sour cream and guacamole on the side for dipping.

Tips and Variations:

  1. Create different Jack-o'-Lantern faces: Fun Faces for your creativity. Best of all, you can customize spooky, happy, or silly expressions to go with your Halloween vibes.
  2. Cheese Variations: For a bolder taste, you can use your mix of cheeses, extra-sharp cheddar, Monterey Jack with peppers, or anything similar. The more melty, the better they are.
  3. Fillings for Kids: For those picky eaters, you can make these with just cheese or be a little sneaky and add some veggies like spinach, corn, or bell peppers for a healthier version.
  4. Protein Options: Use cooked chicken, ground beef, or even shredded pork to help make the quesadillas more hearty and protein-packed.
  5. Cooking Tip: Press down slightly with a spatula while the quesadillas cook to prevent cheese from leaking out. I have this whole thing, so it is all sealed in a package together.
  6. To Bake: If you are making quesadillas for a crowd, bake them. Bake at 375°F (190°C) for about 10 to 12 minutes until crisp and the cheese has melted.
  7. Serve: Serve with orange salsa or pumpkin hummus for a Halloween flair.
