Ingredients
- 1 lb ground beef (80/20 is best)
- 1/2 cup plain or seasoned breadcrumbs
- 1/4 cup milk
- 1 small onion, finely diced
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese (optional if you want it cheesy)
- Cooking spray or oil (for muffin tin)
Instructions
Step 1: Preheat the Oven: Start by preheating your oven to 375°F (190°C). Lightly grease a muffin tin with some cooking spray or oil. A tin that holds a dozen muffins works great.
Step 2: Mix the Ingredients: In a big bowl, mix together the ground beef, breadcrumbs, milk, onion, egg, Worcestershire sauce, ketchup, garlic powder, onion powder, salt and pepper. If you want them cheesy, go ahead and add the shredded cheese in there too.
Step 3: Form the Meatloaf Bites: Scoop around two tablespoons of the mix into each muffin cup. You can use a spoon or an ice cream scoop, whatever is easier. Press down gently to make sure they fit well.
Step 4: Add Topping: Put a small amount of ketchup on top of each bite. This gives them a tangy glaze when they bake.
Step 5: Bake the Meatloaf Bites: Bake in your preheated oven for about 20 to 25 minutes until their temperature hits around160°F (71°C). The tops should look a little browned with glossy ketchup on top.
Step 6: Cool and Serve: Let them cool in the tray for about five minutes. Then take them out and serve while warm with mashed potatoes, veggies, or any side dish you like.
Tips and Variations
- Don’t Overmix: Be gentle when mixing everything together. Overdoing it can make tough bites. Â

- Keep it Moist: Adding milk helps keep things moist; feel free to use beef broth or cream instead.
- Make Ahead: They freeze really well. Make ahead of time, then reheat when ready, which makes meal prep easy.
- BBQ Meatloaf Bites: Change out ketchup with BBQ sauce for smoky flavor.
- Cheesy Centers: Stuff each one with cheddar or mozzarella before baking; they get soft inside!
- Spicy Version: Add hot sauce or diced jalapenos to spice things up.
