Ingredients
- 4 pounds pork baby back ribs, 2 racks
- BBQ sauce (1 c, your favorite brand or homemade)
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper (if a little spicy)
- ½ cup apple cider vinegar
- 1 tablespoon olive oil
- Chopped fresh parsley, to garnish
Instructions
- Prepare the Ribs: Pull the membrane from the back of ribs to ensure even cooking and tender ribs. You do this by running a knife under the membrane and peeling it back.
- Season the Ribs: Mix together in small bowl smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Rub them well with the olive oil and then really turn them in the spice mix so they are quite covered. You want it seasoned on both sides
- Arrange in the Crock Pot: Cut ribs in half to fit into the Crock Pot. Stack the ribs with meaty-side out.
- Add Liquid: Layer the ribs around the Crock Pot, not on top so that they stack easily. This will add moisture and also help to tenderize the meat even further.
- Cook Low and Slow: Place the lid onto your Crock Pot and cook on Low for 6-8 hours, or on High for 4-5 hours. The ribs are done when they become nice and tender and you should be able to pull at them with a fork.
- Finish with BBQ Sauce: Once the ribs are done, carefully remove from the Crock Pot. Cover both sides of the ribs with BBQ sauce for a crispy end, and if you go for a sticky, caramelized surface, then put the ribs on a foil-lined baking sheet and broil in the oven for 3–5 minutes or till bubbly and somewhat charred.
- Serve: Slice the ribs into single portions, garnish with chopped parsley, and extra BBQ sauce on the side. Serve with Zucchini Fries or a crisp Cucumber Salad for a refreshing side.
Tips and Variations
- Different Sauces: You can always add a honey mustard glaze or even teriyaki sauce instead of regular BBQ.
- Add up the spice: If you prefer more heat, increase the cayenne pepper or use a spicy BBQ sauce.
- Add a few drops of liquid smoke to the sauce for that smoky flavor without a smoker.
