- Pie Crust:
- 1/2 allpurpose flour
- 1 cup diced cold unsalted butter sticks
- 1/4 ice water (more if needed)
- 1 sugar
- 1 teaspoon salt
- Apple Filling:
- 6 to 7 medium apples (Granny Smith or Honeycrisp are best)
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 2 tablespoons all-purpose flour (for thickening)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter (cut into small pieces)
- Egg Wash:
- 1 beaten egg
- 1 tablespoon milk or water
Instructions
Step One: Make the Pie Crust: Mix flour, sugar and salt in a big bowl. Add cold butter chunks and mix till it looks like coarse crumbs. Slowly add ice water while stirring until it forms dough. Shape into two disks, wrap in plastic and chill for at least an hour.
Step Two: Prepare the Apple Filling: Peel, core and slice the apples thinly. In another bowl, toss apples with sugars, cinnamon, nutmeg and allspice. Add flour, lemon juice and vanilla extract. Mix well so apples are fully coated, then let sit for about 15 minutes.
Step Three: Roll Out the Dough. Heat oven to 425°F (220°C). On a floured surface, roll out one dough disk to fit a 9-inch pie dish. Press dough into dish and trim off extra edges.
Step Four: Put Together the Pie: Put apple filling in the crust. Spread small butter pieces on top. Roll out second dough disk and place over filling. Trim edges and crimp them together. Cut small slits in the top crust for steam.
Step Five: Apply Egg Wash: Mix egg with milk or water in a small bowl. Brush this on top crust for golden color when baking. Optionally sprinkle coarse sugar on top too.
Step Six: Bake the Pie: Put pie on middle oven rack with baking sheet underneath to catch drips. Bake for about 45 to 55 minutes until crust is golden brown and filling bubbles up. If edges brown too fast, cover them with foil for the last few minutes of baking.
Step Seven: Cool and Serve: After baking, take out the pie carefully and let cool at least two hours before cutting it up. Serve with vanilla ice cream if you like.
