Ingredients

  • Rounded slices of 3 large cucumbers (preferably English type)
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup vinegar (white or apple cider)
  • 2 tablespoon olive oil
  • 1 tablespoon granulated sugar (or honey for sweetness more naturally)
  • Salt and pepper to taste
  • 1/2 tablespoon red chilli flakes for a little heat

Instructions

Cucumber Salad

  1. Prepare the cucumbers and onions: Cut the cucumbers and red onion into thin slices. If you prefer drier cucumbers, sprinkle them with a little salt. Let the water be released for 10 to 15 minutes, then wipe it up with paper towels. This is optional but helps keep the salad crunchy.
  2. Make the dressing: Mix together the vinegar, oil, sugar, or honey and salt or pepper. Season and taste as required. The dressing should have a bit of tang with just a hint of sweetness.
  3. Combine salad ingredients: Combine the cucumbers, red onion, and fresh dill in a large mixing bowl. Add dressing and toss until everything is evenly coated.
  4. Chill and Serve: Stir, then cover and refrigerate for at least 10 minutes. This helps the flavours marry and also contributes a nice crispiness from the kind of pickling process for the cucumbers. Once chilled, serve garnished with more dill if you like.

  1. If you are wondering which cucumbers to use, I recommend English or Persian because they are less watery and have a very thin skin, so you don't need to peel them.
  2. Change Sweetness: You can change the quantity of sugar or honey in dressing as per your taste buds. Note: You may also skip if you like a pure sour taste.
  3. Alternatively for Creamy: Throw in approximately 2 to 3 tablespoons of Greek yoghurt or sour cream to turn the salad dressing into a creamy one. So your cucumber salad is creamy, and this will make it extra, extra rich, and creamy.
  4. Extra Crunch: Mix in sliced radishes, bell peppers, or even chopped celery for a quick addition of texture and colour.
  5. Add in Some Spices: Just a dash of garlic powder or onion powder (or fresh minced garlic) can really make the dressing pop. If you like some heat, crushed red pepper flakes are another excellent option.
