Ingredients
- For the Marinade
- 1/4 cup olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon salt
- 1/2 tablespoon black pepper
- 1/4 tablespoon optional for some heat: crushed red pepper flakes
- For the Skewers
- 1 Lb. large shrimp peeled and deveined (tails on or off)
- Lemon wedges, for serving
- Chopped fresh parsley or cilantro (optional)
Instructions
- Prepare the marinade: Combine olive oil, garlic, lemon zest, and juice in a medium mixing bowl with chopped parsley leaves and seasonings of salt and pepper; add chilli flakes too if you like. This marinade infuses fresh and bright flavours into the shrimp.
- Marinate the Shrimp: Add clean shrimp to the bowl of marinade and mix well so each piece of shrimp is coated. marinate covered and in the refrigerator for at least 15 minutes up to 30 minutes. Remember not to marinate too long, because the acid in lemon juice "cooks" shrimp.
- Prepare the Skewers: If the skewers are wood, prepare them by soaking in water for at least 20 minutes to help prevent burning while on the grill. Place the shrimp on skewers and space them evenly.
- Preheat the Grill: Camp Chef Smokepro BBQ is set to medium-high heat (around 400 degrees). Also: lightly oil the grill grates to avoid sticking.
- Grill the Shrimp Skewers: Place skewers on the grill and cook for approximately 2 to 3 minutes per side, until shrimp are pink and opaque with a slight char. Take care not to overcook, as shrimp toughen easily.
- Serve: Transfer the skewers to a serving plate. Extra fresh parsley or cilantro is used to garnish lemon wedges. Serve with a side of Garlic Butter Rice or Cucumber Yogurt Dip for a refreshing contrast
Tips and Variations
- Spice Up Variation: You Can Spice Up The Marinade By Simply Adding A Little Smoked Paprika Or Ground Coriander. It definitely needs more seasoning. Just do not let it sit for more than 30 minutes as the shrimp will become mushy.
- Stovetop Option: If you don't have a grill, my second option would be to cook the shrimp skewers in a hot grill pan or bake them in a 425°F oven for about 6 to 8 minutes, turning halfway.
- Spice It Up: If you like spice on your fried chicken, add extra crushed red pepper flakes or a splash of hot sauce to the marinade.
- Dipping Sauce: A garlic aioli, tzatziki, or a spicy mayo are all great dips that help bring some pops of flavour and creaminess to the slightly charred shrimp.
