Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup pesto (store-bought or homemade)
- 4 wholewheat or regular tortillas
- 1 cup spinach or arugula
- 1 tomato, sliced
- ½ red onion, thinly sliced
- 1/2 Cup Mozzarella Cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Lemon wedges, to serve
Instructions
- Prepare the chicken: Season the chicken breasts with salt and pepper. Preheat olive oil in a skillet over medium-high heat. Add the chicken and sear on each side for 6 to 7 minutes per side or until cooked through and no longer pink in the center. Remove the skillet from the heat and rest for 5 minutes before thinly slicing.
- Assemble the Wraps: Place the tortillas on a clean surface. Evenly distribute 2 to 3 tablespoons of pesto on the tortillas; be sure to leave some space around the edges.
- Add the ingredients: Place a small handful of arugula or spinach, 2 tomato slices, some red onion, and the sliced grilled chicken on top of each tortilla. Top with mozzarella cheese.
- Wrap It Up: Fold in the sides of the tortilla and roll into a wrap. As you roll, make sure to pinch the sides or the stuffing will come out.
- Serve: Place in the oven to bake for about 15 to 20 minutes, or until crispy all over. When done, remove from the oven and let cool before serving. Cut the wraps in half and enjoy. Add fresh lemon juice squeezed on top of the wraps for an additional flavor kick.
Tips and Variations:
- Try Different Flavors: You can also add in traditional basil pesto, sun-dried tomato pesto, or spinach pesto to alter the flavor profile even more.
- Grill the wraps (crispy exterior touch): In a panini press or skillet for 2 to 3 minutes per side until golden and crispy.
- Vegetarian: There are no vegetarian options involving poultry, but the pesto-wrapped vegetables can be grilled as above and added with mushrooms, bell peppers, and zucchini.
- For Those Who Like Cheese: Feta or goat cheese, if mozzarella does not have your tongue wagging.
- Add Avocado: For a smoother texture, add avocado slices for the wrap.
- Go for Heat: Add a red pepper flake or dash of light, hot sauce in the wrap.
- Meal Prep: These are amazing for meal prep. You could make all the chicken ahead of time and keep it cold in the fridge. To eat, simply assemble the wraps.
