Ingredients
- 2 boneless skinless chicken breasts, cut in strips
- 1 tablespoon olive oil
- Fajita Seasoning (store bought or home made) 1 tablespoon
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 cups grated cheese (cheddar, Monterey Jack or a blend)
- 4 large flour tortillas
- Sour Cream, Salsa, and Guacamole for serving
Instructions
- Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Put in the chicken strips and Fajita seasoning. Cook for 5 to 6 minutes, stirring occasionally, or until chicken is golden and cooked through. Take chicken out of skillet and reserve.
- Sauté the veggies: Return skillet to heat and add bell peppers and onions. Cook for 4 to 5 minutes, until vegetables are softened and a little charred. Take off the stove and leave aside.
