Ingredients
- For the Chicken:
- 1 lb (450 g) boneless, skinless chicken thighs or breasts chopped into bite-sized pieces
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- For the Sweet and Sour Sauce:
- 1 cup fresh pineapple cubes (or canned and drained)
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornflour mixed with 2 tablespoons water, for thickening
- For the Vegetables:
- 1 bell pepper (red, yellow or green), cut into chunks
- 1 medium onion, wedged
- 1 cup snap peas or broccoli florets
Instructions
- Cook the chicken: In a large skillet, heat the vegetable oil over medium-high. Season the chicken pieces with salt and pepper. Place them in the skillet and cook until crisp, around 5 to 7 minutes per side. Add the chicken one by one to the oil skillet and keep it aside.
- Make the Sauce: In the same skillet, whisk together ketchup, apple cider vinegar, brown sugar, and soy sauce. Stir together and then bring to a simmer. Remove the broth from heat and stir in the cornflour mixture to thicken.
- Add Vegetables and Pineapple: Stir in bell pepper, onion, and pineapple to the sauce. Continue cooking for another 3 to 4 minutes, or until the veggies are fork tender but still have a crisp.
- Combine: Add the chicken back into the skillet and stir to cover everything with sauce. Cook for about 2 to 3 minutes, until warm.
- Serve: Serve the Sweet and Sour Pineapple Chicken over Garlic Fried Rice or alongside our Coconut Baked Shrimp for a tropical feast.
