Ingredients
- 1 bone-in, skin-on turkey breast (about 4–6 pounds)
- Tablespoon olive oil or melted butter
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon of dried)
- 1 Tablespoon Fresh Thyme (or 1 teaspoon dried)
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 lemon, quartered
- 1 onion, quartered
- 1 cup chicken broth or water
Instructions
- Preheat the Oven: Blend all ingredients together, then place mixture in a oven safe bowl or dish. Pre heat the oven to 350° and adjust an oven rack to the lower third of the oven and preheat to 350 degrees with a sheet pan in place.
- Prepare the Turkey Breast: To ensure crispy skin, make sure to pat your turkey breast dry. Put them in a roasting pan or large baking sheet skin side up.
- Season the Turkey: Combine the olive oil or melted butter, minced garlic, rosemary, thyme, paprika, salt and black pepper in a bowl. Apply this mixture to the entire turkey breast, and make sure it can get under the skin as well for better flavor.
- Add Aromatics: Arrange the quartered onion and lemon around the turkey breast in the roasting pan. Add the chicken broth or water to the bottom of the pan to help keep turkey moist during roasting.
- Roast the Turkey: In the pre-heated oven, lay the turkey breast facing up and roast until thermometer reads 165°F (75°C) when measured at center of the thickest part. This will take about 1 hour, 30 minutes to 2 hours. If turkey breast is browning too quickly during the last 30 minutes, and then tent with foil.
- Rest the Turkey: Take the turkey out of the oven to let stand 10-15 minutes before slicing. Resting is important because it allows juices to go back and retain moist and tender meat.
- Serve: Cut the turkey breast into slices and serve with your choice of sides, such as mashed potatoes, cooked vegetables, or stuffing.
Tips and Variations
- Herb Butter: This is very similar to the garlic butter version, but instead of using olive oil, combine with butter. Pay an extra ounce of herbs or parsley, then you have a great herb-roasted roast.
- Citrus Variant: Add a few orange slices to the lemon for an additional hint of sweet citrus.
- Gravy: Make quick gravy by using the pan drippings. Just pour your drippings into a saucepan, mix in some flour, and simmer till it becomes thick and creamy. If you like the recipe with turkey, substitute a boneless turkey breast for the roast. Cook for 15-20 minutes less, depending on the size.
- Meal preparation: sandwiches, salads, and soups with our leftovers from the turkey. Keep leftovers in an airtight container in the fridge for 2-4 days or freeze for 3 months is also possible.
