Ingredients
- For the Meatballs:
- 1 lb ground chicken
- ½ cup breadcrumbs
- 1 egg
- 1 tablespoon green onion, minced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the Teriyaki Sauce:
- 1/3 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 clove garlic, minced
- 1 tsp freshly grated ginger
- 1 tablespoon cornstarch (diluted in water) to thicken the flowing.
- For Garnish:
- Sesame seeds
- Sliced green onions
Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- Make the Meatballs: In a large bowl, add ground chicken, breadcrumbs, egg green onions (only the white part that you finely chopped Gudiya) garlic soy sauce, sesame oil ground ginger salt and pepper. Mix until combined fully.
- Form the Meatballs: Shape it in 1-inch meatballs using your hands or small ice cream scoop and place them on the prepared baking sheet. This should yield you around 18 to 20 meatballs.
- Bake the Meatballs: Cook in the preheated oven for 15 to 18 minutes or until meatballs are browned and cooked through (internal temperature of at least 165°F/75°C).
- Make the Teriyaki Sauce: As the meatball is baking, make your teriyaki sauce in a saucepan, combine the soy sauce with brown sugar and honey very small as well as rice vinegar and sesame oil garlic ginger. Combine all the ingredients with 4 cups of water, and simmer over medium heat. Add the cornstarch slurry and stir to combine, let cook for about 1 to 2 minutes until the sauce has thickened. Remove from heat.
- Coat the Meatballs in Sauce: When meatballs are done cooking, add them to the sauce and toss until well coated If you like a less saucy wing, brush the sauce on to coat it.
- Garnish and Serve: Remove meatball to a serving plate and sprinkle with sesame seeds and chopped green onions. You can serve it with steamed rice, noodles or as an appetizer. You can also serve with a side of Garlic Fried Rice or Steamed Vegetables for a complete meal.
Tips and Variations
- To Make it Gluten-Free: Use gluten-free soy sauce and breadcrumbs for a gluten-free version.
- Add Any Veggies: Feel free to mix it up by adding some finely diced bell peppers or grated carrots for texture and flavour.
- Spice it up: Stir in a pinch of red pepper flakes to the teriyaki sauce for some added heat.
- Make Ahead: These meatballs are freezer friendly. Simply bake them and freeze, then reheat as required. The sauce can also be stored in a separate container and kept in the fridge.
- Appetizer: Add toothpicks into each meatball for a simple and delightful party food. Serve with additional teriyaki sauce if desired for dipping.
- Changeup the Protein: Ground chicken can easily be replaced by ground turkey, pork or beef for another flavour profile.
