Ingredients
- 1 package (12 ounces) silken tofu, drained assistant
- 1/2 Cup Unsweetened Cocoa Powder
- 1/4 cup maple syrup or sugar of your choice
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/4 cup plant milk (almond)
Instructions
- Prepare the Tofu: Drain the silken tofu and press it completely dry with a paper towel, so there is not much moisture. Add tofu to a blender or food processor.
- Add the Chocolate Flavor: Now, with the tofu, add the cocoa powder along with syrup for a sugar-free taste and vanilla extract. Puree until fully creamy.
- Adjust the consistency: Pour in the plant-based milk slowly while blending it all together. You can simply vary the amount of milk to get your desired consistency—less for a thicker pudding, more for creamier yogurt.
- Taste and Sweeten: If you think the dessert should have a sweeter taste, add more maple syrup. Pulse again until smooth.
- Chill and Serve: Serve the pudding into bowls or cups. Refrigerate at least 30 minutes to let the flavors show and pudding firm a little
- Enjoy: Chill, serve, and top with fresh berries, coconut shavings, or a few crushed nuts for some crunch.
Tips and Variations:
- Sweeteners: Other good alternatives include agave syrup, coconut sugar or normal sugar in place of the maple. Sweeten to taste.
- Optional Flavor Add-Ins: Pinch of cinnamon Splash of coffee for mocha pudding, or you can further indulge by adding a spoonful of peanut butter for that extra creamy and nutty feel.
- Top with toppings of your choice, such as crushed nuts, dark chocolate chips, fresh raspberries, or a dollop of coconut whipped cream if desired.
- Fore More Creamy: If you want more creaminess, melt 2 tablespoons of dark chocolate and blend together.
- Storing: Keep the chocolate tofu pudding in an airtight container for up to 4 to 5 days, refrigerated. It is the perfect dessert to make ahead.
