Ingredients
- 4 skinless yellow menfolk whites of the pale (flesh) halves
- Salt and pepper, to taste
- 2 tablespoon olive oil
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1/4 cup chicken broth
- 1 big lemon (3 tablespoons)
- Zest of 1 lemon
- 1 tablespoon Italian seasoning
- Fresh parsley, for garnish
- Lemon slices, for garnish
Instructions
- Prepare the Chicken: Season chicken breasts on both sides with salt, pepper and a pinch of Italian seasoning.
- Cook the Chicken: Bring a large skillet over medium-high heat and add the olive oil. Once the pan is hot, place chicken breast in skillet and brown on both sides about 5 to 6 minutes per side until golden outside. Chicken should also have an internal temperature of 165°F as well.
- Remove chicken from skillet to rest. Make the Lemon Garlic Sauce: In the same skillet over medium heat, add butter and minced garlic. Stir in cumin and cook for 1 minute or until fragrant. Add chicken broth, lemon juice, and lemon zest to closet skillet. Cook for 2 more minutes, then add both cans of tomatoes and stir to combine. Lower the heat to medium and simmer for 2 minutes or until slightly reduced and thickened.
- Combine and Serve: Return chicken breasts into skillet and ladle lemon garlic sauce over them For 2 to 3 minutes, let the chicken sit in all this great sauce so it can absorb of that flavour. Garnished with freshly chopped parsley and lemon wedges on the side. It will go super with your favourite Side rice, Mashed potatoes or may be steam vegetable.
Tips and Variations
- More Deliciously marinated in lemon juice, olive oil, garlic and Italian seasoning — the longer you let it sit (not too long), the more perfect this dish becomes.
- For Skin-On Bone-In Chicken: If you chose to cook with the skin-on-bone-in chicken, add either an extra 5 to 10 minutes as these are thicker cuts of meat.
- Add Veggies: Add asparagus or eco-friendly beans (or julienne-cut bell peppers for a harder veggie) to frying pan throughout final 5 minutes of food preparation.
- Add Spice: For a bit of heat in the lemon garlic sauce, add red pepper flakes or cayenne.
- Creamy: Stir 1/4 cup of heavy cream into the sauce for a creamy Lemon Garlic Chicken.
