Ingredients

  • If utilizing chicken breasts, cook and shred 1 lb of boneless, skinless
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 21 oz (1 can) diced green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 tsp chili powder (we prefer the heat-flavored kind)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • 4 cups chicken broth
  • 15 oz cans white beans (such as cannellini or great northern), drained and rinsed 2
  • 1 cup frozen or fresh corn
  • 1/2 cup sour cream
  • Half cup cream cheese, at room temperature
  • Salt and pepper to taste

Instructions

White Chicken Chili

  1. Cook the Chicken: Bring a large pot of salted water to a boil, then add the chicken and poach until just cooked through, about 15-18 minutes. Shred with two forks. Set aside.
  2. Sauté the Aromatics: Heat 3 tablespoons olive oil in a large pot over medium heat. Drop in onion and cook until it is mushy translucent, about 4 to 5 minutes. Add minced garlic and sauté for 1 minute or until fragrant.
  3. Add Spices and Green Chilies: Stir cumin, coriander, chili powder, oregano, and smoked paprika into the onion mixture; cook for 1 minute. Stir to cook on for about 1 minute. Now, add the chopped green chilies and mix thoroughly.
  4. Add Chicken Broth and Beans: Pour in the chicken broth, white beans, and cooked shredded chicken. Stir to combine.
  5. Simmer the chili. Return the pot to high heat. Bring the mixture to a boil before turning down your stovetop so its at medium or low with no lid on for about 20 to 25 minutes, stirring till thickened and flavors blended.
  6. Add Creaminess: Stir in the sour cream and softened cream cheese to get a creamy mixture.
  7. Add the corn and cook for an additional 5 minutes or until heated.
  8. Season and Serve: Add salt and pepper to taste. Divide chili among bowls, garnish with chopped fresh cilantro, grated cheese, or sliced avocado. Serve with a side of Homemade Cornbread or Garlic Parmesan Breadsticks for the perfect accompaniment.

Tips and Variations

  1. Hot chili: Add a minced jalapeno or 1 to 2 tablespoons more of the cayenne if you like it hot. For a different protein pick, you could also try substituting the already cooked and then shredded chicken for some shredded turkey or ground chicken.
  2. Mash: If you like a thicker chili, mash some of the white beans before adding them to your pot or simply use less broth.
  3. To Make It Dairy Free: Use some cashew or coconut milk for a dairy-free stroganoff and swap the sour cream with more of the former.
  4. Slow cooker: Combine all ingredients except the sour cream/cream cheese in a slow cooker and cook on low for 6 to 8 hours. Add sour cream and softened block cheese for the last 30 minutes of cooking.
